RECIPE: Hot Spiced Apple Cider

What smell is more comforting than that of cinnamon apple lingering throughout the house.  It is a wonderful combination that is associated with the holidays and hopefully has the ability to transport you in time.

Wanting to get into the mood of the holiday season, we took a Trader Joe’s spiced apple cider mix and took it up a notch.  By adding allspice, cinnamon, nutmeg, cloves, and lemon slices, and boiling the mix on the stovetop, we were able to highlight the flavors of the ready made cider and bring forward the hints of citrus.

Hot Spice Apple Cider Recipe

Ingredients

1 Teaspoon Allspice

1 Tablespoon Cinnamon

1-pinch Nutmeg

5-7 Cloves

1 Quart Spiced Cider (Trader Joe’s) – Or substitute apple juice

Optional:  Slices of citrus to taste – lemon, orange, or pineapple.  Or substitute a splash of juice.

Directions

Bring the spiced cider to a simmer.  Add all of the dry ingredients and optional citrus flavors, and whisk.  Simmer over medium heat for 15-20 minutes.  Serve in mugs and enjoy!  Yields 3-4 servings, depending on the size of your mugs.  🙂

What to do with leftover taco meat? RECIPE: Breakfast Tacos Al Pastor

What’s a lazy Sunday if you don’t stay lounging around in your PJs all day.  So when trying to figure out what to make for breakfast why not use last nights leftovers? Here is a recipe idea for  what to do with your leftover taco meat.  For this recipe, I used al pastor taco meat, but you can substitute leftover beef, chicken, or veggies.


AL PASTOR – THINLY SHAVED PORK MEAT MARINATED IN SPICES, DRIED CHILE, AND PINEAPPLE.

Recipe: Breakfast Tacos


What you need

For the taco filling:

4 Eggs

2 Tablespoons Taco Meat

1 Teaspoon Sour Cream

Pinch of Salt

6 Tortillas

Taco Toppings – Salsa, Sour Cream, Cheese, or Guacamole

Scrambled eggs al pastor

How to prepare

For soft and creamy scrambled eggs:

  1. Whisk eggs until frothy
  2. Whisk in sour cream until broken into small pieces
  3. Mix in meat and salt
  4. Place a lightly buttered pan over low heat
  5. Add egg mixture and slightly simmer before stirring
  6. Occasionally stir eggs mixing the bottom cooked eggs with the uncooked eggs on top
  7. Continue to cook over low heat until done

For hot soft tortillas:

  1. Lightly butter a medium pan and place over high heat (careful not to burn the butter)
  2. Add two tortillas at a time flipping once they start to raise (about 7-10 seconds each side)
  3. Remove from heat and place to the side
  4. Repeat the process until all tortillas are done


Prepare Tacos and add TOPPINGS

Yields 6 Servings

Recipe: Strawberry Ghosts *BOO!*

Happy Sunday! Hope everyone had a good weekend. Halloween is just around the corner, and I don’t know about you, but it’s one of my favorite holidays.  If you are looking for Halloween themed recipe ideas, these Chocolate Covered Strawberry Ghosts are very cute and simple to do.  I got the idea from a recipe I found on Taste of Home.  To cut the prep time I used a ready-made white chocolate dipping cup and a cake gel tube to decorate. I will say that I didn’t realize the cake gel would not completely harden, so you have to be careful during prep.

Strawberry Ghosts

IngRedients

15 Large Strawberries (Medium Package)

1 Cup Baker’s Dipping, Premium White Chocolate (7 oz)

1 Wilton Gel Tube, Black (0.75 oz)

Directions

Step 1

Prep the strawberries. Wash and pat completely dry.  You want to remove as much moisture on the exterior as possible, as moisture will change the consistency of the melting chocolate when you are in the dipping process.

Prepare the dipping chocolate. Microwave the chocolate as per instructions.

Step 2

Dip the strawberries in chocolate.  I found the best way to do this was to hold the strawberries by the head and spoon the chocolate onto the strawberry to avoid adding excess moisture to the chocolate. You must work quickly during this step as the chocolate in the cup hardens fast.

Place on a non-stick plate. I found that by linning my plate with wax paper, the strawberries were easier to remove from the plate.

Refrigerate. Freeze for about 5 minutes to make the decorating step easier.

Step 3

Decorate! Place the strawberries on your serving plate and decorate.

Refrigerate until ready to serve.
